The Flavor Experience
Made in the exact same way since 1979, this semisoft cheese is washed with a salt brine until it gets a perfectly buttery, dense texture and a fine funky rind. To call it pudgy isn't rude, it's a compliment.
The Story
Jeffa Gill's dairy in West Cork is one of the last Irish farms still using raw cow's milk, which is supplied to them by neighboring farms throughout the year.
Usage Tips
If you like it nice and funky, let it get warm and pair with a bright white wine and crackers. If you prefer to subdue some of the funk, sparkling wine brings out the fruitiness of this cheese and the bubbles cut nicely through the rich, buttery texture. We like it paired with rye crisp and two glasses of wine.
