Love this cheese, just enough bite to it. Great with dips or chips. Softens to just right consistency for munching on after being out of fridge for couple of hours. One of my favorites.

The ranch where 1605 is made has been around since 1878, and the cheese itself is named after the year "Don Quixote" was published by Cervantes. This cheese comes to us from our dear friends at Essex St. Cheese Company, who rely on Mr. Luis Martin to select the best of these wheels for distribution. Made by female cheesemaker Maria, Finca Sierra La Solana also produces grapes and almonds.
This naturally rinded cheese is essentially naked, begging to be wrapped in something luxurious and sweet. Try with a touch of lavender honey for a silk robe effect, or lace her up in some sweet, sweet raspberry jam as her feather boa. If you really want to make a statement, send this beauty to your palate wearing only fresh grapes and buttery pistachios. Bow-chicka-wow-wow.

I am a huge fan of manchego...... so i had to buy this..... laying in bed before christmas shopping of phone to use a coupon code I had..... and I got the biggest size...... yes i was delightful... I ate it in short order too...... just by the slice....... um um good!
so nutty but like fresh nuts and great texture that makes me want more. it's not spicy like others but i like it for that reason! best manchego ever
