Lancaster Cheddar - Mild in flavor and smooth in texture, with subtle grassy notes from the great raw milk. Tastes like Fontina that was made in Pennsylvania as opposed to Italy. Easy melting, and easy going.
Horseradish Cheddar - This kind-hearted cheddar gets an extra kick! zing! pow! of flavor from the addition of fresh horseradish.
Jalapeno Colby - Colby cheese is one of the true American-made styles, and you can treat it similarly to a Parm or a cheddar. We like the hot colby shredded into an omelette with some greens, or melted down as the base cheese for a spicy queso dip. You could also just enjoy slices as a snack with your favorite hoppy or malty beer.
Smoked Colby - A hearty 60-day aged raw milk colby cheese that was hand-smoked over applewood for a woodsy, meaty flavor profile.
