The Flavor Experience
Colatura is a great source of glutamic acid, known to awaken the fifth element of taste perception, umami. It brings a rich, beefy flavor to the game and it's addition to stews and roasts is pure alchemy.
Colatura is an ancient Roman ingredient which originated near the anchovy rich waters of the Amalfi Coast. The preparation is as follows: anchovies are hand packed with alternating layers of sea salt in centuries old chestnut barrels. They are pressed, then aged for 5 months. The barrel is the tapped and an opaque amber brew is collected. It can be added to roast, soups, stew, or gravies to amplify the primary flavors of the dishes.
Use as you would fish sauce or simply drizzle on a tomato. But be careful, a little goes a long way, so it's best to start off slow.
