It can be described at lightly sharp with a creamy consistency and a bright white paste, with very sharply defined midnight blue veining throughout the cheese. Each wheel weighs about 6 pounds and stands about 4 inches high. Ripened in cool cave-like cellars, Bleu d' Auvergne ripens fully after about 4 months. Although a high production cheese now, it still retains its small farm production feel and comes with a strong rustic blue flavor. It is best presented as a salad cheese, served on the side or incorporated into vinaigrette. As a table cheese, pair with dessert wines and the sweetest of fruits to balance its spicy edge.>
