This prized selection from Grey Barn is only made twice a year--once in the spring when the grass is sweet and in early fall when the air begins to cool. The timing is everything in creating this masterpiece. Expect the funk but with a butterscotch smoothness and slight herbaceousness thanks to the cow’s diet and the time of year it’s made. The buttery texture is just crumbly enough you’ll be tempted to add it to nearly everything (hint: salads, steaks, burgers).

Cheesemaking isn’t for the faint of heart. Grey Barn’s years of dedication to practice and time is what sets them apart from fellow cheesemakers. Their six artisanal cheeses are made by hand on their farm in Chilmark, Massachusetts, using organic milk from cows raised on-site. 

Usage Tips

Crumble with dried dates and figs over a buttered cracker or tossed into a fresh spinach salad. Enjoy after dinner with a snifter of Woodford Reserve.

If you should also order dry goods, we neatly pack them around the other materials, enclosed in a sturdy, corrugated container.

The delivery clock starts once the package is picked up by our carriers, not once you submit your order, and there are times when our fulfillment team may hold certain orders to process and ship after the weekend in order to ensure product viability.
