From its namesake historical region (that would be Brie), Brie de Meaux is considered the paragon of its style, finding global adoration after the Vienna Congress declared it the “King of Cheese” in 1814. It is purported that Charlemagne became an instant fan of this cheese after one bite and that Louis XVI requested a final taste of Brie de Meaux before suspension from the throne. Brie de Meaux received its AOC status in 1980, so you can feel comfortable telling you friends this is “real” Brie.
The dose of earthiness Brie de Meaux delivers is big enough to handle a deep, red wine. Get the effect, and some red fruit to brighten it up, with Tishbi Cherry Shiraz Jam. Those loamy forest flavors are perfect for another icon of French cuisine: escargot. Top each snail with a tidbit of this Brie each snail before they go in the oven.
