Brun-Uusto

Quick Overview:

Quick Facts

Country of Origin: United States
Milk Type/Treatment: Raw Cow
Rennet Type: Animal

The Flavor Experience

Originally produced in Sweden and Finland, “bread cheese” is baked to form a tasty crust similar to toasted bread. The rich buttery flavor is great accompanied by both sweet and savory delights alike. Try it served warm as an individual appetizer or dessert with your favorite accoutrements.

The Story

Brunkow Cheese has been producing in Darlington, Wisconsin, since 1899. They are a family owned and operated company that sources milk from small neighboring dairies, and use traditional, sustainable methods of cheese-making. All milk is from pastured cows that never receive rBGH treatment.

Usage Tips

Serve this cheese warm to enjoy the soft, buttery flavor alongside your favorite savory crackers, artisan bread, dried fruits or olives. Dip it in Di Bruno Sweet Basil & Garlic sauce for a twist on breaded-and-fried mozzarella sticks. Drizzle with maple syrup or even dip a piece into your coffee for an extra treat.

Our Brun-uusto Cheese pairs well with Zinfandel, Merlot, Cabernet Sauvignon, IPAs and Pilsners.

Prosciutto-wrapped Brun-uusto over Arugula
by Jackie Botto

Slice Brun-uusto into thin sticks. Wrap a single layer of prosciutto around each stick, if the slice is to long, just cut off the excess.

Fry in a non-stick pan on each until golden and the cheese is melty.

Serve alone, or a top a simple salad of arugula and Balsamic Fig Dressing.
