The Flavor Experience
For the luck of the Irish, here's a whimsical and enchanted Irish blue cheese. It’s full of rich, voluptuously creamy textures punctuated with a little spicy lift from the blue veining. Young wheels are firm and relatively moist, with a fresh and slightly sharp flavor. With a bit of aging, it develops a melt-in-the-mouth creaminess and a rounder, more mellow flavor.
The Grubb family has a long tradition of food and farming in the area around Tipperary. Jane and Louis Grubb started making Cashel Blue in the 1980's after Louis did extensive agricultural research all over the country. His goal was to make Ireland’s most opulent and brilliant blue, which he achieved in the cheese you taste today. Since the very first wheels were formed, Cashel Blue gained an international reputation as Ireland's most famous blue cheese.
Crumble up and serve with pears, or use as the topping on a caramelized onion and rosemary pizza. Cashel is also great sauteed with mushrooms and served as a bruschetta, or layered on a piece of dark chocolate.
