Colston-Bassett Dairy has been making Stilton the old-fashioned way since the early 20th-century. They source their milk from only five neighboring farms and that attention to detail and quality shows through in the finished product. This blue is formidable, there's no denying that. But the strength of the penicillium roqueforti doesn't overpower flavors of lush, grassy milk.

Colston Bassett Stilton Stiltons are pierced less than others so that there is a richer, creamier texture. They work with only five farms in Nottinghamshire to source their high-quality milk.

Usage Tips

Tradition dictates that one must have port with stilton and you'll get no argument here. But if you're in the malty mood reach for a barleywine or imperial stout—preferably something with a little barrel age on it.

    Phenomenal cheese. Simply the best. Great texture (recommend eating at room temperature). Fairly sharp bite but gentle after-kick, leaving a heavenly glow.
