This cheese is aged for (often over) two years by Marcel Petite at Fort St. Antoine to develop unrivaled complexity punctuated by fine crystals.     Might be the best cheese year-to-year in the world. Superb alpine style somewhere between gruyere and emmethal. Tastes like roasted cashews sautéed for a minute in brown butter and then plopped on warm toast.
