The Flavor Experience

An English cheese with Dutch inspiration, Cornish Kern is kinda-sorta made like a traditional Gouda cheese, but with Alpine (think Gruyere) inspiration in the recipe. Like a Gouda, the curds are washed during the aging, which removes some of the saltiness. A black breathable wax exterior helps to suck the moisture back out over 16 months of aging, which leaves the cheese with a buttery, caramelized and extra nutty flavor profile. It's like a cheese influenced by candy corn.

The Story

Each wheel is produced by hand at Lynher Dairies, the makers of the famous Cornish Yarg. They've won awards at the World Cheese Awards, Global Cheese Awards, and the British Cheese Awards.

Usage Tips

Cut into small hunks and drizzle with your favorite artisanal caramel to compliment the notes of the cheese - we like the Fat Toad line of multi-flavored small batch caramels. Or, shave a bit of Cornish Kern over a traditional butterscotch pudding, for a surprisingly delicious dessert twist. Also pairs well with brown ale, an ESB or a scotch ale.
