As the balsamic moves through the barrels of varying wood types, it reduces and extracts a multitude of flavors including cherry, chestnut and juniper. Giovanni Cavalli comes from a long line of Balsamic vinegar producers. In fact, his father, Ferdinando Cavalli, founded the official Consortium of Producers of Traditional Balsamic Vinegar from Reggio Emilia. Gold seal balsamic has been aged for 25 years according Giovanni’s standards of quality and matured via solera system. This intricate process involves moving the vinegar to progressively smaller wooden casks each year. Every bottle that comes out of this system contains traces of the balsamic from the oldest batch, connecting its consumer to hundreds of years of tradition.
