The Grafton Cooperative Cheese Company was founded in 1892 by a group of dairy farmers. At a time when there was no refrigeration, many cooperatives were formed to turn fresh milk into food that could be stored for a longer period of time. Today, Grafton Village cheddars are aged anywhere from one to four years, and sometimes even longer. All of the cheeses are handmade using premium, unpasteurized, hormone-free milk from small local family farms.
Melt it on dark bread for a grown up grilled cheese. Fold it into eggs for a fancy morning omelet. (Also top with truffle zest!) Layer with potatoes for a cheesy gratin. Melt for a holiday-party-appropriate truffley cheese dip. Grate it lightly over sauteéd mushrooms and dark greens.
