Grafton Village Cheesemakers are makers of handmade Vermont Cheddar and specialty cheeses in Grafton, Vermont. With a little bit of pungency and a touch of musk, this cheese is deliciously different and a hint more special than your everyday snacking cheddar.

The Flavor Experience

Cheddar made better with earthy, rich truffle studded throughout.

The Story

The Grafton Cooperative Cheese Company was founded in 1892 by a group of dairy farmers. At a time when there was no refrigeration, many cooperatives were formed to turn fresh milk into food that could be stored for a longer period of time. Today, Grafton Village cheddars are aged anywhere from one to four years, and sometimes even longer. All of the cheeses are handmade using premium, unpasteurized, hormone-free milk from small local family farms.

Usage Tips

Melt it on dark bread for a grown up grilled cheese. Fold it into eggs for a fancy morning omelet. (Also top with truffle zest!) Layer with potatoes for a cheesy gratin. Melt for a holiday-party-appropriate truffley cheese dip. Grate it lightly over sauteéd mushrooms and dark greens.

Straight From the Monger's Mouth

“The truffle is just encased in the cheese. We’re not talking flecks here and there. It doesn’t matter, though, if your slice is heavily veined or not: that truffle essence punches through the whole paste. You simply cannot be let down with this one.
