Cherry Grove Farm conceived of this cheese in the Italian Alpine Style but with age comes a rich and sweet flavor that would be familiar to Gouda lovers. Combine that sweetness with the tyrosine crystallization from the long aging process and you wind up with a unique hybrid of a cheese that's not quite in the Dutch style, no longer quite in the Italian style but all American.
The wide variety of flavors within Havilah give you a lot of options for pairing. A dry red like Amarone would pair nicely with the savory elements while a Pinot Grigio would bring out Havilah's pineapple notes. Or you could keep it local with a little Flying Fish Abbey Dubbel, some spoonable caramel, and our black lava cashews.
