The cheese every house needs.

Quick Overview:

Fudge-y dense Trappist that keeps you coming back.

Quick Facts

Country of Origin: United States - California
Milk Type/Treatment: Cow
Rennet Type: Traditional

The Flavor Experience

Rich semi-firm cheese washed over with organic apple cider and aged for 45 days. While the paste is dense, the flavor is bright and sweet, making for an easy-to-eat or melt texture perfect for whatever your cheesy heart desires.

The Story

After 17 years in some of San Francisco’s best restaurants, Sue Conley and Peggy Smith were ready for a new challenge. The college friends rekindled their friendship by buying a renovated hay barn in the small town of Pt. Reyes Station. Inspired by the barn, the two began using milk from the neighboring creameries to make fresh, delicious cheeses. The rest is history.

Usage Tips

Slice into chunks and nosh after work with a tall glass of Hefenwiezen, or melt atop a crusty bread for gooey grilled cheese.

shipped with care

Your order is guaranteed to be handled with care and shipped with an eye toward ensuring the products arrive as fresh as possible. All of our perishables are packed in insulated, heat-resistant packaging with safe, re-usable ice packs. If you should also order dry goods, we neatly pack them around the other materials, enclosed in a sturdy, corrugated container.

It generally takes one business day to receive and process your order. Shipping speed selected at checkout applies to the time in transit only. The delivery clock starts once the package is picked up by our carriers, not once you submit your order, and there are times when our fulfillment team may hold certain orders to process and ship after the weekend in order to ensure product viability. Please note processing times may be extended during the holiday season.
