The Story

Often referred to as "Italian bacon", pancetta is Italian salt-cured pork belly. Unlike its American counterpart, pancetta is unsmoked and cured with a mixture of salt and spices, then dry-aged for several months. Add pancetta to your favorite Italian dishes without infusing the smokiness of bacon. Pancetta comes either rolled, which is most common, or flat, which resembles bacon. It can be cubed or sliced thin, depending on the application, and is usually used for fat-rendering.

Usage Tips

In just about every application, you start with rendering the fat and crisping the meat. From there, you can make superb carbonara, saute some vegetables, or top a burger. Can you name something that pork fat doesn't make better?
