Sweet, but more of a lactic sweetness than the typical caramel sweetness found in cow milk Goudas. Brown butter tones carry on and on and on, before leaving the palate with a clean finish.
Produced in Holland exclusively for Cypress Grove in Humboldt County, California, Midnight Moon perfectly unites the Dutch expertise of Gouda-making with Cypress Grove's otherworldly penchant for fine goat cheese. The result is sublime. We love to suggest this to customers who claim they don't like goat cheese, because it is so different from the fresh, tart flavor we have come to expect from chevre.
Pair with a Belgian Tripel style, like Victory Golden Monkey. Zinfandel, Syrah and dessert wines are lovely partners as well, and consider fig jam for something non-alcoholic.

Midnight Moon cheese is out of this world, has a nutty, sharp taste and nothing compares to it with the exception of Black Betty. It is excellent in arugula salad with roasted pine nuts, kumato tomatoes with a homemade dressing of olive oil, dash of black truffle oil and lemon. Salt & pepper .I order multiple at one time so I never run out!!! LOVE THIS CHEESE....
