Jamón Serrano is more than a delicacy in Spain; it is a normal part of every familys life. In nearly any bar or cafe across Spain, you'll see whole Serrano hams hanging above you, ready to be sliced at a moment's notice. This is an iconic Spanish food, served in thin slices and paired with good wine and crusty bread. Jamón Serrano literally means 'mountain ham.' It's cured in salt and then hung to dry for 20 months. The flavor is full and intense, yet elegantly meaty. Unlike the high-end Jamón ibérico from south-western Spain, this ham comes from the more ubiquitous white (or pink) pig.
Monte Nevada is a fourth-generation family from the highlands of Segovia, an area exposed to the winds of the nearby snow-capped mountain peaks. These are extraordinary climate conditions for curing ham, and so they make extraordinary ham. They have been pioneers in preparing high quality, vacuum-sealed boned hams for 120+ years.
No cooking is necessary for this beautiful ham. Serve it sliced paper-thin with cheese and olives (we like Garrotxa or Valdeon), or use it to flavor your favorite Spanish recipes.
