Moses Sleeper is another gem from brothers Andy and Mateo Kehler of Vermont’s Jasper Hill Farms. These fellas have a way with names, often memorializing local heroes in their cheeses. Moses Sleeper is named for a Revolutionary War scout who, along with compatriot Constant Bliss, lost his life defending the Bayley Hazen Military Road. For those of you keeping count at home, there’s two other Jasper Hill Cheese in that brief account, alone!
Slightly spicy, savory jams find a perfect landing on Moses Sleeper. Try the Tomato Chutney from Tait Farms, and tie the spice and butter together with a rich, full-bodied Chardonnay. Roasted garlic (just squeeze and spread) is an equally smooth and rich go-with for Moses Sleeper: spread them together on a crusty baguette or rich dark bread.
