The creamiest of the creamy, Mozzarella di Bufala almost runs like a Brie once you cut into it. It has a tart, almost yogurt-like followed by the riches flavor you'll get out of a cheese without adding cream.
Mozzarella di Bufala is one of Italy's name protected or DOP products. It can only be made from the milk of the domesticated water buffalo. There is no one confirmed theory for a single origin of the buffalo's arrival in Italy, though the most widely is that were originally brought up from North Africa through Sicily to be used as a draft animal.
A spicy oil like Carm or Di Bruno Fruttato cuts nicely through the richness. Or, if you're feeling decadent, provide a little counterpoint with some white truffle oil.
