The Flavor Experience
A farmstead Gouda produced by Otto Jan Bokma, his brother, and their families in Friesland, near Workum, Holland. This cheese is not flashy. Instead, it is a classic example of how the dutch like their Gouda. Not over-aged and intense, but slightly creamy and mellow, with just enough bite for the American palate.
One of the few premium Goudas hand-selected by the late Daphne Zepos at Essex St. The farm lies on a large plot of land that is quintessentially Dutch: flat, sea-level, green grasses and blue skies, windmills dot the horizon. Approximately 400 cattle feed on this lush pasture, and these grassy flavors are easily identifiable in the cheese.
Pair with a frothy brown ale or Pinot Noir. As it is great for cocktail parties, don't be afraid to break out the gin.
