Each set includes: 

Pork Liver Mousse - Dedacently creamy, sweetened with Port to finish. 
Pork Rillette - Hand-chopped pork shoulder slow-cooked with ginger and thyme. 
Country-Style Pork Pistachio Pâté  - Classic pâté  with fresh herbs and a hint of pistachio for crunch. 
Saucisson Sec Salami - Traditional French salami with subtle black pepper and garlic spices. 
Saucisson D'Arles - Stunningly marbled with just a hint of salt. 
Saucisson D'Alsace - Sweet and spiced with clove, allspice, nutmeg, and cinnamon. 

The Story

Elias Cairo grew up like many first-generation Greek-Americans, with a family passionate about doing things the 'old-fashioned way.' It made sense when Elias apprenticed in kitchens across Europe that he would gravitate toward the art of tradition in curing meat. When he set up his shop back in Portland, Oregon, he had a simple mission: craft with purity and patience.  

Usage Tips

Pâtés this stunning need nothing more than a simple slice of baguette and dollop of stone-ground mustard. Pair with a crisp Chardonnay or Blonde Ale.
