Typically, Pecorinos are a bit on the harder side— ideal for grating into a sauce or topping on pasta. Toscano Fresco changes all that in the best way possible. Aged for just the minimum number of days, each bit of this rich, aromatic cheese is a treat for all five senses. Glowing white color, soft to slice through, melts in your mouth flavor, and a rich perfumey smell, it’s a bite you’ll never forget.
This special cheese comes from a small farm town in Tuscany known as Contigiano. Each selection comes from farms directly in the Tuscany, Umbria, or Lazio regions of central Italy and is handcrafted with the same attention to detail as traditional cheesemakers in the region. Each wheel is molded by hand, salted ever so slightly for the first 36 hours, and aged until flavors are sweet, mild, and unmistakably unique.

I love regular Pecorino aged cheese, but I searched for a non aged similar cheese. I'm in Love with this mild tasting semi soft sheep's milk cheese. I slice it, and grate it on pasta, you need to try ❤️

There are no words to categorize this cheese. It is simply one of the finest culinary treats on the planet. I first tasted it in a Rome restaurant and have chased it around Italy and the U.S. since.
The best - just dont tell anyone else: Hard to find!
One reason I didn't wish to purchase wedges vs a wheel: the wedges had distinctly different flavors. I assume one was aged differently than the other. I would prefer the option of purchasing a wheel.
