Complex and gorgeous. Prufrock is Grey Barn’s first cheese and a timeless classic they’ve perfected year after year. It’s funky and French-inspired cow’s milk cheese with grassy notes (a nod to the lush fields of Martha’s Vineyard their cows graze on) and a soft golden rind that’s hand-washed and cave-aged. 

The Story

Cheesemaking isn’t for the faint of heart. Grey Barn’s years of dedication to practice and time is what sets them apart from fellow cheesemakers. Their six artisanal cheeses are made by hand on their farm in Chilmark, Massachusetts, using organic milk from cows raised on-site. 

Usage Tips

Enjoy with a heady Belgian Trappist Ale and slices of warm baguette with a dollop of apricot jam.
