Rockets Robiola

Layers of complex flavors unfold in each bite.

Quick Overview:

Ash-dusted with nutty, earthy notes.

Quick Facts

Country of Origin: United States - North Carolina
Milk Type/Treatment: Pasteurized Cow

The Flavor Experience

Robiola is the type of cheese that makes a statement in its style and flavor. This silky paste is dusted in vegetable ash before it develops a doughy, wrinkled rind with funky aromatics. Inside, its lush flavor toes the line of tangy and chalky, bright and subdued. Nuanced flavors of mushroom and toasted almond throughout make it snackable and easy to enjoy.

The Story

Inspired by small Italian farmstand creameries, brother-sister duo Austin & Samantha Genke's venture into cheesemaking was a labor of love and passion. From starting their own farm in 2009 to creating their first batch of handmade cheese in 2015, they've dedicated countless hours to understanding the intricacies of fresh ingredients. That's why each wheel is made with locally-sourced ingredients from Durham-area dairies as well as the Boxcarr family farm.

Usage Tips

Slather on crusty bread and sip a glass of crisp Sauvignon Blanc.
