The Flavor Experience

Victory Cheese is a grassroots, volunteer task force of cheese leaders who banned together during the coronavirus pandemic to help support small family businesses. This box includes:

Alpha Tolman - Jasper Hill Farm 
The best Gruyere Switzerland never made. A toothy alpine with nutty flavor and nuanced notes of roasted onion and bone broth. 

Reading Raclette - Spring Brook Farm 
This funky raclette is no-frills Alpine cheese. Creamy and sweet with an almost apricot-y finish. One of the best melting cheeses for your next BBQ session.

Black & Blue - Firefly Farms
Blue cheese made from goats milk gives this wedge a more subtle, sweet flavor as it ages. Creamy, luscious, approachable with a unique delicacy. 

The Story

Remember the Victory Gardens of World War II? Victory Gardens were designed to boost morale and feed families in troubled times. Victory Cheese is designed to boost the cheese industry and give cheese lovers a chance to do their part in saving it.

Each wedge is unique to the farmers who made it. Alpha Tolman, for example, is named for Alpha Tolman's grandfather Enoch, one of the founders of Greensboro Vermont. Jasper Hill's Vermont food venture center played a significant role in the development of this cheese. It provided a place for the people of Vermont's northeast kingdom to develop new and exciting agricultural products. 

Reading Raclette comes from Spring Brook Farm, a farm in Reading Vermont that's known for its simple alpines, and dedication to teaching urban kids where food comes from.  

Firefly Farm may create innovative cheese, but their ingredients remain whole and simple. Each cheese is made by hand, employing cheesemakers, not machines, to give jobs back to the community and educate future cheese-loving generations.

    I enjoyed the flavors of all the cheeses that arrived. I even was able to make a delicious blue cheese dressing for salad.

    The 3 cheeses are excellent! One issue. The ice pack melted during shipping and the paper wrappers were very wet and cheese somewhat wet. Blue cheese mostly. FYI.
