Colston Stilton
Absolutely a delicious fromage.
Crumbly & fudgy but retaining a creamy texture that practically dissolves on the tongue. All hail the king of blues!
Country of Origin: UK
Milk Type/Treatment: Pasteurized Cow
Rennet Type: Animal
Colston-Bassett Dairy has been making Stilton the old-fashioned way since the early 20th-century. They source their milk from only five neighboring farms and that attention to detail and quality shows through in the finished product. This blue is formidable, there's no denying that. But the strength of the penicillium roqueforti doesn't overpower flavors of lush, grassy milk.
Colston Bassett Dairy has been making Stilton for over 100 years. It is that dedication to tradition that makes Colston Bassett Stilton the only Stilton you'll find in our case. Colston Bassett Stilton Stiltons are pierced less than others so that there is a richer, creamier texture. They work with only five farms in Nottinghamshire to source their high-quality milk.
Tradition dictates that one must have port with stilton and you'll get no argument here. But if you're in the malty mood reach for a barleywine or imperial stout—preferably something with a little barrel age on it.

Absolutely a delicious fromage.
Goes really well with good, fresh pecans.
Phenomenal cheese. Simply the best. Great texture (recommend eating at room temperature). Fairly sharp bite but gentle after-kick, leaving a heavenly glow.
Creamy and nutty. Pair with the best Port you can get and you have heaven
