White pepper & pistachio butter.
Smooth when younger. Dry and flinty when well aged Pantaleo always finished smooth with a touch of spice reminiscent of smoky white pepper.
Country of Origin: Italy
Milk Type/Treatment: Pasteurized Goat
Rennet Type: Animal
The goat's diet and maker's craft blend to provide Pantaleo its outstanding flavor. It comes on gentle and mild but lingers as it unfolds into a long, nutty, peppery finish. This cheese pairs extremely well with fresh shellfish such as oysters, shrimp, and crabs.
Pantaleo is a rare 'caprino' made in a land dominated by sheep milk production. In, fact the cheese is made by one of the area's most trusted producers of Fiore Sardo.
Pair with Sicilian pistachio pâté or La Quercia Prosciutto Piccante.

I first tried this cheese when I visited the in person store in Philly & I was hooked! I’m normally not as crazy about goat cheeses, but this one was perfect, with crystals, definitely more for a cheese board as opposed to shredding or grating. Yum!
This cheese is superb with a pour of DiBruno’s Gold barrel aged balsamic over it. Really enhances an already flavorful cheese. One of my favorites!
This cheese taste? "More, please."
It is dry so you do not have to spread on anything. Just cut a small piece and eat it ("finger food").
Hungry at bedtime? Have some more.
very salty
From the moment I tasted Pantaleo I was in heaven. I love goat cheese and had not often had an aged goat that has some texture to it besides creamy. It is kind of like a sauvignon blanc form a cheese with some citrus notes. After I fell in love, my local cheese shop stopped carrying it and eventually shut its doors. I then found it at the Whole Foods HQ only to learn it was discontinued. My search took me to DiBruno which satisfies my Pantaleo cravings. I still will share some with friends, but I have to really feel generous because I would keep this all to myself!
