This decadent wedge of heaven hails from Tuscany, where it is bathed in olive oil for the aging process. After eight months of soaking, this sheep's milk cheese emerges herbaceous, with a subtle nuttiness, and a touch of sharpness.
The Story
This special cheese comes from a small farm town in Tuscany known as Contigiano. Each selection comes from farms directly in the Tuscany, Umbria, or Lazio regions of central Italy and is handcrafted with the same attention to detail as traditional cheesemakers in the area. Each wheel is molded by hand, salted ever so slightly for the first 36 hours, and aged until flavors are sweet, mild, and unmistakably unique.
Usage Tips
Slice straight off the wedge, or grate over the top of your favorite pasta dishes. Add to a quiche that your mother-in-law will envy and be sure to have a hearty glass of red alongside.
