The Eighth Day of Pairings - Auricchio Stravecchio, Hot Soppressata & Roasted Red Peppers Today’s pairing is a real favorite at our 9th Street location, and one we love to put out on the table if company drops by. It goes back to our roots as a neighborhood grocery store by combining three kinds of traditional Italian deli staples — a sharp cheese, a cured meat, and something from the antipasto bar! Auricchio Stravecchio is our oldest and sharpest Italian provolone — you’ll recognize it in store by its unmistakable black wax coating. It’s got that classic mouth-puckering, salty prickle that everyone loves in provolone; and that’s especially enhanced when eaten alongside thin slices of hot soppressata! Chase the spicy sharpness with a sweet, soothing forkful of roasted red peppers to bring everything back into balance. Not convinced?
