Delice de Bourgogne & Prosecco

This cheese is a luxuriously creamy, rich, full flavored cow's milk cheese from France. Similar to brie in both style and texture, this cheese has the added qualities of a full-fat milk content giving it an interior likened to that of whipped cream cheese. The exterior is encased in a chalky soft rind that is yellowish-white in color, while that decadent interior yields flavors of fresh cream and butter, with a slightly salty finish. Perfect with dried figs and Prosecco.

Gorgonzola Dolce & Spumante

Along with Stilton, Cabrales and Roquefort, Gorgonzola can comfortably claim to be one of the four most renowned and respected blue cheeses on the planet. This classic version is mild and nearly buttery in texture, with mushroom notes and prevalent blue funk. At home in numerous applications, it is perhaps best enjoyed on bread with a drizzle of truffle honey and fresh fruit, or melted over steak and caramelized onions. Perfect to toast with Spumante!

Ossau Iraty & Rosé

While it is agreed that cheese was first created by accident, many countries claim that this fortunate mistake happened within their boundaries. What cannot be disputed, however, is that the first intentional cheese production took place in the Basque. Scientists have found cheese cooking pots in the Pyrenees mountains that date to the year 3000bc. That's 5000 years of practice and little has changed since its inception. Ossau-Iraty, the grandfather of Basque cheeses, has been made in the same style for millennia, and can best be described as the highest quality sheep milk cheese made by people who clearly know what they are doing. Tasting of almonds, hazelnuts and olives, it is mild but complex and instantly satisfying.

Le Gruyere 1655 & Lambrusco Secco

Made to the same traditional specifications that the Rime brothers developed in 1655, this Gruyere sets the standard for all other Gruyeres. Touched only by the hands of master cheese makers, using precise recipes, the result is an unparalleled, award-winning cheese. The cream-colored paste offers a pleasing, creamy texture and flavors reminiscent of toasted nuts and fruit. Paired with jams, charcuterie, and dry white wines, Le Gruyere AOC 1655 is as close to perfection as we've seen.

A sweet snack of roasted pecans, coated with a special recipe of sugar, butter, cocoa & cinnamon. These pecans make the perfect accompaniment to soft and rich French cheeses like Brie or Delice de Bourgogne, or alongside powerful dessert cheeses like Colston Basset Stilton.
