In light of the recent news about wood (edible cellulose) being found in domestic versions of Parmesan, we want to introduce you to the REAL "Parmesan." The real deal is Parmigiano Reggiano, imported straight from the motherland, Italy.

Meet the Mastermind Behind "The King of Cheese!"

Giorgio Cravero Since 1855, Giorgio Cravero’s family has selected and matured Parmigiano-Reggiano in Bra, Italy. The Cravero family is known for selecting the best wheels from small farms in the Parmigiano Reggiano protected origin (DOP) area and aging them at their stone facility in Bra, Italy. Following traditional methods, the Craveros avoid refrigeration, relying on winter temperatures in their native Piedmont to create deeply crystallized cheeses with maximum sweetness. Be sure to try Cravero Parmigiano, one of our favorite cheeses in our case!

​A few Parmigiano usage suggestions from Madame Fromage:

  • Pair with Truffle Honey Any light honey will do, but a fragrant honey elevates the experience in unimaginable ways. Add Prosecco for a bubbly finish!
  • Soft Boiled Eggs Peel a softly boiled egg and slice it open over two toasted baguette rounds, then top with shaved Parm and a pinch of sea salt or truffle salt. Add a side salad to make it lunch!
  • Spirits Before dinner: sparkling wine. After dinner: a medium to full-bodied red, or Amontillado sherry.
  • Dessert Cheese Enjoy Parmigiano Cravero with aged balsamic vinegar with a side of fresh apricots and a cold glass of Prosecco!
