Hello, Summer! I've been looking for you, but now that I've seen the first almost-100 degree days, where I find myself sticking to chairs and couches and lowering my AC at a rate that my electric bill would weep over, I finally believe you are here to stay. I'm sad, however, that the arrival of hot summer days means a tragic breakup with my kitchen appliances. (It's not you, Oven, it's me...and the 96 degree forecast...) I refuse to cook anything! Do you hear that, Summer?! REFUSE! And with that being said, here's a nice and chilly twist on an easy, cheesy summer appetizer: Goaty Guacamole goatcheese 4 oz. soft goat cheese (try Cana de Cabra from Spain, or classic Bucheron) Pre-made guacamole (Calavo brand "Pico de Gallo" recipe is my favorite, but feel free to make it fresh) Package of Sesmark sesame-flavored rice crackers Paprika for garnish To assemble: Spread a generous teaspoon of refrigerated goat cheese onto a crispy, salty rice cracker, top with a healthy dollop of cold guacamole, and sprinkle with paprika for a pop of summer color. THAT'S IT! Makes enough for 2-3 people as a snack, and you won't believe how refreshing and yummy this visually-appealing hors d'EASY is!
