His creative charcuteries always marry the alpine flavors of his childhood with the ingredients found in his new home upstate New York. Each variety is made using traditional French techniques and high-quality meat.

    This is wonderful sausage. It’s nice and dry; very dense with a great smoky flavor. Excellent.
