Amazing cheese
This is one of the best cheeses I’ve tasted. It is not breakfast or a punch in the face, It is just amazing.
Like having breakfast for dinner.
Sheep sharp with a brown sugar finish; Dense and fudgy, sweet and satisfying; Aged in fresh chestnut leaves, undressing this stunner takes you right back to prom night.
Country of Origin: Italy
Milk Type/Treatment: Pasteurized Sheep/Cow
Rennet Type: Animal
Occelli in Foglie di Castagno, like most cheeses from the Piedmont, is made under a perfect storm of correct milk ratios and only when the chestnut leaves are fresh. This results in a limited availability and a high price tag. But don't be scared off by the bottom line. A pound is a lot and a little goes a long way. The value is there; so dont feel guilty blowing your cheese allowance on this gem. You'll be glad you did.
Originally butter focused, Beppino Occelli entered the industry in 1976 and currently makes some of the world's most authentic cheeses representing the Italian Alps region of Cuneo. His Testuns pay homage to a very old, rustic style of cheesemaking that utilizes various milk ratios and 'left overs' from other types of food production.
Pair with a Milk Stout or a cup of coffee.

This cheese will rip your face off. In a good way.
Do you want a cheese that will knock your figurative socks off? THIS IS IT. It packs so much nutty flavor, you'll need just a small bite to be satisfied. It's so rich and strong, you'll want to date it. If you like cheese, buy this cheese.
Everything was quick and product excellent.
Only two of the 4 lbs were wrapped in paper and not vacume sealed.
