Asiago is a delightful medium-aged cheese exhibiting all of the flavor benefits of a much older cheese. 

The Story

Pre 1000 A.D., Asiago was made from cow and sheep milk. In the early 1500s, production was transitioned to all cow's milk, as sheep had a very aggressive browsing style, which made the wet area prone to landslides.
