The Flavor Experience
Aged Asiago contains some really freaky tropical fruit notes (primarily pineapple with hints of guava) and an umami reminiscent of Vietnamese grilled pork. What you end up with is a cheese that eats like a meal. Rich and satisfying as it hits on all of the scientific labels for taste.
The Story
Pre 1000 A.D., Asiago was made from cow and sheep milk. In the early 1500s, production was transitioned to all cow's milk, as sheep had a very aggressive browsing style, which made the wet area prone to landslides.
Usage Tips
A classic for antipasto, pair with pepperoni, olives and roasted peppers.
