The Flavor Experience
A bouquet of blackberry, sour cherry and oak, silver seal balsamic coats the tongue with the viscosity of a freshly tapped maple. Made in Reggio Emilia by distinguished producer, Giovanni Cavalli, the harmonious balance of sweetness, bitterness and acidity is a result of the vinegar moving through barrels of varying wood types, including oak, chestnut, mulberry and juniper.
The Story
Giovanni Cavalli comes from a long line of Balsamic vinegar producers. In fact, his father, Ferdinando Cavalli, founded the official Consortium of Producers of Traditional Balsamic Vinegar from Reggio Emilia. Silver seal balsamic has been aged for 12 years according Giovanni’s standards of quality and matured via solera system. This intricate process involves moving the vinegar to progressively smaller wooden casks each year. Every bottle that comes out of this system contains traces of the balsamic from the oldest batch, connecting it's consumer to hundreds of years of tradition.
Usage Tips
This complex, concentrated vinegar is among the best; it can stand alone or act as a dish-elevating ingredient. Try drizzling over ricotta di pecora with berries or a decadent plate of carpaccio.
