As cheddar ages it loses its smooth, firm texture and becomes more granular and crumbly, making this cheese perfect for chunking but very difficult to slice. Each 3 pound block is hand-dipped in wax to both signify its excellence and to package the cheese in a more artisan and attractive manner. Its sharp character makes this cheese perfect for pairing with the hearty ale of your choice. It also goes great with grapes, sausage, dried apricots, nuts, and ham.
