Dick and Helene Willems arrived in Ireland in the late 70's, having left their native Holland. Sourcing milk from a local herd of Holstein-Friesian cows, their production mirrors a traditional Dutch Gouda style, resulting in deeply-flavored specimens shipped around the world by Neal's Yard Dairy.
