Aromatherapy for the tummy and the soul. The scent that wafts from a wheel tickles the nose and immediately relaxes. Tasting Ginepro, too, provides a calming effect as the dry, flinty cheese suddenly turns creamy as it mixes with saliva.
The Story
As Parmigiano production took hold in the early 1900's many sheep farmers transitioned their herds to cows from sheep leaving very few pecorino producers in the area. Made by Paolo Farabegoli in Italy's Emilia Romagna region, Ginepro is a representative of the region's dwindled sheep herds.
Usage Tips
Serve with some iced-down dry French Vermouth or with Fernet and honey.
