The inspiration for Prima Donna was to create a hybrid of Parmigiano Reggiano and Gouda, and they seem to have found a pretty good balance between the two.
Born in 1990, this is essentially Gouda made with starter cultures that are typically used in northern Italy. These cultures result in a sweeter cheese than you would typically find in Holland. They continue to refine the cheese, as in 2022 where they switched to a microbial rennet suitable for vegetarians.
Pair with most beers or red wines. We love it with Black Lava Cashews or Cinnful Cocoa Pecans.
