Time to wake up your taste buds. This savory wedge hails from cows grazing along Lake Raschere at the base of Mt. Mongioie in Northern Italy. Lush pastures bring a grassy spice to the cheese’s natural buttery-ness, while its delicate saltiness develops in its aging process.
Raschera’s rareness in the United States makes it a unique addition to cheese boards. In order to be dubbed a true Raschera d’Alpeggio, the herds creating it must graze at an elevation of at least 2952 ft above sea level.
Pair with a refreshing regional wine like a crisp Arneis or bold red like Nebbiolo.
