Spanish paprika, also known as pimenton, is made from oak-smoked stone-ground round red peppers that are native to Spain. This variety is made from sweeter peppers (you can also find hot and bittersweet varieties) and is used in the Spanish kitchen to add color to dishes and also as a flavoring agent. All sorts of seafood, sausage, rice and meat dishes call for Pimenton de la Vera.
The Story
Safinter is one of the world's oldest and largest producers of Spanish spices that hail from the La Mancha region. Since 1912, the Gonzalez family has sold top-grade saffron from Albacete, a Spanish city in this famous area that has become famous for its superior quality saffron. Their pimenton (smoked paprika) is just as revered both at home and internationally.
Usage Tips
Get creative! Spanish smoked paprika can be used in a wide variety of ways. Remember, much of Mexican cuisine originated from a Spanish heritage, so use it to flavor chili, tortilla soup, and quesadillas; liven up taco sauce or any egg dish (don't forget the huevos!) Rub it on meats before grilling to add a subtle, smoky flavor. Sprinkle a dash over rice, potatoes or even pasta. Add it to extra virgin olive oil and serve as a dipping oil with crusty fresh bread.
