The Story
Who doesn’t romance a transatlantic voyage? The Ticklemore in Britain and the Ticklemore in America, though they all came from the same creamery in Devon, are vastly different cheeses. Ticklemore remains crumbly with a homogenous paste, varying little from rind to center, in its native land. When crossing the sea to the New World, though, atmospheric changes that are just right promote ripening and lead to the creamy, American version you can try in our shoppe.
Usage Tips
These puffs of ash-ripened goat cheese are built like a Baked Alaska. A delicate bloomy-rind leads into the creamy outer-ring characteristic of this style, and surrounds the silky, unusually light center.
