An incredible, full-bodied Camembert style from Hampshire Cheese, Tunworth's lavish notes of sauteed Brussels sprouts and broccoli are cloaked in a subtle nuttiness. This cheese has a succulent and luxurious mouthfeel. As divine as it is addicting, Tunworth is truly a delight to enjoy stateside.
The Story
What started as little more than a hobby for Stacey Hedges has turned into a livelihood. Beginning in her kitchen and now working out of a state-of-the-art dairy just down the road from their original space, Stacey and her partner-in-cheese Charlotte Spruce have developed Tunworth into a formidable camembert style. Using the milk from Holstein cows, purchased from a local farm, they form the curd using traditional animal rennet and cut it into approximately one inch chunks. The curd is then set and the cheese is allowed to drain. They've played with many different combinations of cultures and molds to acquire the flavor profile and texture they wanted. There is a lot of attention paid to each cheese, turning, investigating, and packaging. Their personal time and investment is a testament to handmade, artisan cheese making.
Usage Tips
Sit Tunworth next to a mild Merlot or an oaky Chardonnay and pair with Tishbi Cherry Shiraz Jam. Mongers will always add warm, fresh bread and good friends to complete the decadence.
