The Flavor Experience
Bayley Hazen is an American original based on English Stilton. The Kehler brothers named this cheese after a Revolutionary War era road commissioned by George Washington. The nutty, toasty flavors of the milk complement the boozy, anise-y notes in the blue.
The Story
The Kehler brothers at Jasper Hill are known for their delicious cheeses made from raw milk from their own herd of Ayrshire cows. Bayley Hazen was developed based on English blues such as Stilton and Devon Blue. In 2014, Bayley was named the best raw milk cheese at the World Cheese Awards surprising no one behind the counter at Di Bruno Bros.
Usage Tips
Bayley Hazen is just at home smeared on a rib eye fresh off the grill as it is atop a hunk of artisanal dark chocolate. Try a fruity dessert wine or a barley wine.
