A Closer Look at Brunkow Cheese & Fayette Creamery
Founded in 1899, Brunkow Cheese is tucked away in the hills of southwestern Wisconsin. Sourcing cow’s milk from surrounding dairy farms, they make their cheeses by hand and in small batches, aging them on-site. Cheesemaker Joe Burns makes their specialty cheeses under the “Fayette Creamery” label, including the favorite Little Darling Tomme. Brunkow Cheese is a regular at the major music festival Lollapalooza in Chicago, IL. Brun-Uusto Bread Cheese – A True Wisconsin Tradition, Bursting with Bacon
Brun-Uusto is the authentic version of the traditional Juustalepia (Juusto) specialty cheese with Finnish and Swedish origins. The cheese is mild, with a salty and buttery taste and is well-complemented by jam, maple syrup, or even dipped in your favorite coffee. When baked, the cheese forms a crust with a bread-like appearance. This Brun-Uusto variety includes bacon. It’s perfect for grilling on a panini press or skewering for a quick snack.Little Darling Tomme – A Rare, Earthy Gem That Has Our Mongers Raving
This French-style Tomme has earthy, fruity, and nutty flavors. Its texture is firm and crumbly and goes well with breads and crackers as well as great for baking or melting. Close to the rind it has a “cavey” taste.Fun Fact:
