TRY GORGONZOLA PICCANTE, ITALIAN STYLE

Alongside martinis, serve a wedge of Gorgonzola Piccante with Roman artichokes and caper berries. This combo is creamy, briny, and very elegant if you just want to serve a little nosh. Set out a dish of mixed nuts or add thin breadsticks and a plate of cured meats to make it more substantial. Read more about this pairing from Madame Fromage.

TRY THE STILTON VS. STICHELTON TASTE TEST

Meet Colston Bassett Stilton and Stichelton. These blue cheese brothers essentially share one mother – a similar recipe – but they are made from different milks. I was curious to see if I could taste a difference. Read more about this pairing from Madame Fromage.

TRY GORGONZOLA DOLCE WITH A FIG AND A KISS

Gorgonzola Dolce is sumptuous. The texture is as smooth as frosting, and the taste is as mellow as wedding cake. You can spread it on bread and top it with preserves, swirl a nub into pumpkin soup or cream sauce, or serve it naked with fresh figs and honeycomb. A shake of black pepper livens it up. TRY VALDEON WRAPPED IN BACON WITH AMARENA CHERRY JAM

Try a hunk of Valdeon, a blue cheese made with Cow and Goat milk and wrapped in Sycamore leaves, from Castilla-Leon, Spain. Nestle a wedge of Valdeon on a piece of thick cut bacon and smear on either Fig Jam or Amarena Jam. Finally, enjoy with a glass of Rioja. TRY ROGUE RIVER BLUE FOR BREAKFAST AND/OR ALONGSIDE SOME WHISKEY

Ask any cheesemonger for a sample of the best smoked cheese on the market, and you’ll probably find yourself biting into a blue. Rogue River Smokey Blue, from Oregon state, is cold-smoked over hazelnut shells. This cheese tastes so much like sweet, smoky bacon that you can eat it for breakfast. TRY GORGONZOLA DOLCE WITH CHOCOLATE RASPBERRY SPREAD

For something sweet, serve Gorgonzola Dolce with chocolate-raspberry jam, graham crackers, and crushed coffee beans. This Di Bruno invention is dreamy alongside an espresso. Tell your guests it’s an Italian s’more. And don’t skip the crushed coffee beans on top – they add crunch and a hint of bitterness. Read more about this pairing from Madame Fromage.

TRY ANY BLUE CHEESE, BUFFALO WING STYLE

This is the result of what happens when you love buffalo wings, and you love cheese plates. Meet: The cheese plate that tastes like an order of buffalo wings – only better. Read more about this pairing from our resident cheese lover Janeane.
