Gorgonzola Dolce is sumptuous. The texture is as smooth as frosting, and the taste is as mellow as wedding cake.
You can spread it on bread and top it with preserves, swirl a nub into pumpkin soup or cream sauce, or serve it naked with fresh figs and honeycomb. A shake of black pepper livens it up.

Valdeon, a blue cheese made with Cow and Goat milk and wrapped in Sycamore leaves, from Castilla-Leon, Spain.
Nestle a wedge of Valdeon on a piece of thick cut bacon and smear on either Fig Jam or Amarena Jam. Finally, enjoy with a glass of Rioja.

TRY ROGUE RIVER BLUE FOR BREAKFAST AND/OR ALONGSIDE SOME WHISKEY
