Mac & Cheese Tarts with Skillet’s Bacon Spread - Serves 6
INGREDIENTS:
FOR THE MAC & CHEESE:
8 oz Torchio or other short-cut pasta
1 tbsp salt, plus more for seasoning
2 cups heavy cream
6 oz. shredded
Comté or
Gruyere
4 oz. shredded
Mozzarella
Ground nutmeg
White pepper
FOR THE GARNISH:
Skillet’s Bacon Spread
Caramelized onions
Comté or
Gruyere cut into triangles
Chopped scallions
Method:
Bring 3 quarts of water and 1 tablespoon of salt to a rolling boil. Add pasta, and cook for about 10 minutes until al dente, or done to your preference. Drain and set aside.
Heat the heavy cream over medium heat to a simmer. Whisk in both shredded cheeses until melted and well-combined. Season this sauce to taste with ground nutmeg, salt and white pepper.
Toss the drained pasta and sauce in a large bowl. Spoon the pasta mixture into 6 mini tart molds or ramekins, and broil in the oven until just crisp and browned.
Remove from the oven and let cool slightly. Garnish with Skillet Bacon Spread, caramelized onions, Comté or Gruyere triangles, and scallions. Serve!
